St. Nicholas St. Nicholas is an aged fresh unpasteurised cow’s milk cheese. It is made using a lactic acid clot, similar to the production of curd cheese, and is then placed in individual moulds by hand. The forming of the cheeses is also assisted by the additional of a small amount of traditional rennet, which gives more body to the lactic curd. This is very similar to the way goat’s cheeses are made, and the texture and many of the flavours of St. Nicholas will be like goat’s cheese without the taste of goat! |
